This recipe calls for roasting the pork loin, but I often use lean pork chops and grill them instead. YUM!
3 medium cloves garlic, minced
1/2 c. fresh lime juice
1/2 c. grapefruit juice, not cocktail
1/2 c. reduced sodium soy sauce
1/2 tsp. hot pepper sauce (I use Tabasco)
1 pound lean center cut pork loin, trim excess fat
Combine first 4 ingredients. Allow to sit at room temperature for 30 minutes to one hour for flavors to blend. Place pork in marinade and turn to coat evenly. Cover and refrigerator for at least 1 & 1/2 hours, but no more than 5 hours, turning occasionally. Preheat oven to 450. Drain pork and reserve juices. Roast pork for 10 minutes, then turn and reduce heat to 325 and continue to cook until done.
Boil marinade for 3 minutes, then reduce heat and simmer 10 minutes more. Serve with pork.
